I use a software called 3D LUT CREATOR that allows me to create the LUT's and I use this a lot with PS and LR. LUT's are often used in grading of images and movies and can be subtle corrections of colour or dramatic 'looks' that give a new feel and atmosphere to the footage. The camera profiles you see in your RAW convertors are simply a LUT that is applied to the data after the demosaicing process has taken place. It can be used to create profiles for a camera. It is used to change the colours from one value to another.
